Cellulose ethers are water-soluble, chemically modified polysaccharides that are partially substituted by alkoxy groups, and these materials see use in a wide variety of commercial products. Cellulose ethers undergo gelation and/or phase separation (LCST) upon heating, and their gelation mechanism is poorly understood. The goal of this project is to elucidate the intermolecular interactions that dictate the gelation process and resulting properties.
